In America and especially in Texas, houses are big and kitchens are huge. In my huge kitchen is a giant refrigerator. It holds an amazing amount of food which iswinderful most of the time. However, there are two sides to every coin, and this huge refrigerator is terrifying when it needs to be cleaned out. Looking two rows behind what you have been treated as the last row for two weeks can be down right scary. The smells alone can make you run for the hills.
Today was that day for me. I had to clean out my Texas sized refrigerator. I survived to write about it, but why, why do I wait so long?? I day dream of making sure I clean it out each week but it never happens. I really am thankful for this wonderful appliance that makes my kitchen more beautiful, but today I understand the beauty of simplicity and not having such a large fridge that can be easy to neglect.
Not to worry though. There was minimal gagging and my fridge now looks beautiful...at least for a short while.

What to eat? Feeling hungry but it is not time for a meal? I am a huge fan of healthy snacks. It is a great opportunity to boost your nutrient intake and avoid over eating at your next meal. A snack is never a fail to me; a snack is a chance to get what my body needs and keep my hunger at bay.
My husband also encourages me to snack as he purchased this for me as a gift from me for himself.
Apparently I may say some things I do not necessarily intend to say. Let's face it, I'm not the sweetest when I am hungry. I guess a good snack makes me more pleasant. So what to choose? Well summer in Houston has been hotter than fire so one of my favorite snacks has been frozen blueberries!
These sweet, refreshing morsels are perfect for a lively summer day. I rinse the berries under water then place them in the freezer. When hunger strikes, I grab a handful of berries to put my hunger at bay. But these berries are full of nutrients doing more than just spare me a few hours of hunger. Blueberries are full of fiber (15% fiber) boasting 3.6gm of fiber per cup. Also, they contain phytochemicals pterostilbene and resveratrol that help decrease free radicals produced in the body which can cause damage to DNA and lead to wear and tear in the body. The goodness doesn't stop there! Blueberries contain vitamin K, vitamin C and manganese. Vitamin K is important for blood clotting and bone density. Vitamin K is fat soluble so maybe pair your blueberries with some cheese for better absorption. Vitamin C helps to build cell walls, a continual process in our complex bodies. Manganese does not get much press but it is still very important. It helps the body perform numerous functions from building connective tissues to sex hormones.
The next time your little one asks for a snack, don't think about how it will spoil their dinner. Focus on the wonderful nutrients you can add to their complex developing bodies. And the next time you get the urge to grab a snack before a meal, think of it as an opportunity to add youth and health to your amazing body. Enjoy your frozen blueberries!
