Do you ever wonder what dietitians eat? I know you do because I get asked all the time about what I eat! Today, I had a totally fab lunch that was delightful in every way. The meal was vibrant, delicious, and left me feeling satisfied. On a usual day, I am not this excited about my lunch - hence why I am sharing today. Take a seat because this might come as shocking news, but I am not a regular salad eater. I know, I know you thought all I ate was salad and tofu, but no, it is not true. Sure I eat salads more often than some, but I don't love salad. I have to be in the right mood to have a salad especially during the winter months. Maybe it was the 78 degree weather in February that inspired this salad craving of mine because it came on like a theif in the night. Lettuce + dressing does not equal a salad to me; that is rabit food with sauce. Thankfully, I had a bell pepper and avocado in my refrigerator which started the entire process.
When I make a salad, I do 50% lettuce, 30% veggies & fruit, 10% cheese, 10% lean meat (approximately of course). Today's lunch was simple, some romaine lettuce, 1/5 of an avacado shopped into small bits, 1/2 green bell pepper, 1/2 tomato, 1/2 apple, 1oz low fat shredded cheese, and 3oz turkey lunch meat torn into small peices topped with 1 Tbs low fat Ranch dressing. Yum! Veggies (check), fruit (check), dairy (check), lean protein (check), fiber (check). Took me 5 minutes to prepare. Now you know what I ate for lunch; the secret is out. I hope this inspires you to eat a delightful lunch!
